Vegetable chips sound healthy, but not all varieties are created equal.

Just because it's made from vegetables doesn't necessarily mean a snack has more nutritional power than its fattening potato chip counterpart.

It's easy to be misled by the versions marketed on supermarket shelves.

Often packed with lots of salt, artificial flavors, unhealthy fats, and sometimes added sugars, vegetable chips from the store don't always rank high in terms of health.

But with some proper preparation, veggie chips don't have to be an absolute sin.

Making an at-home version will satisfy your servings of potassium, magnesium, vitamin A, folate, and calcium without the add-ins. Plus, they are vegan friendly and gluten-free!

All you need are four ingredients and four simple steps to savory goodness:

  • 2.5 cups of fresh root vegetables
  • 1 teaspoon of salt
  • 4 tablespoons of oil
  • spices

1. Cut the fresh veggies into thin slices. The best veggies to use for roasting are carrots, parsnips, zucchini, beets, and of course the classic: potatoes. (Try sweet potatoes for a more nutrient-rich option.) You can even throw in some kale!

Bonus points if you have a ripple slicer for cutting, which will give your treats a fancy ribbed look.

2. Mix the slices into a bowl with four tablespoons of oil and your choice of seasoning. Salt and pepper is standard but if you're feeling extra spicy, throw some curry powder, rosemary, paprika, or garlic powder into the mix!

3. Spread out the slices evenly on a baking tray, without letting them overlap.

It's also a good idea to organize the chips by type, so that they can be taken out of the oven at varying times if you notice that some kinds of vegetables crisp faster than others.

4. Preheat the oven to 200 degrees. Bake the veggies for about an hour, watching until they get fully crispy.

It's a good idea to open the oven several times while baking to create a vent, which will dispel moisture and make the chips more crunchy.

Pro-tip: The longer the chips are cooked at a low temperature, the more nutrients are retained. So if you're able to roast for a few hours, try turning the oven temperature down and keeping those vitamin-packed snacks inside for a longer time.

The finished batch should make enough to share with a few of your favorite fellow couch potatoes!
